Look closely at the surface in a closed box to see that dissolved sugar means fewer water molecules leave, so the vapor pressure drops, then use a temperature sensor to find the boiling point elevation and freezing point depression of sugar water in terms of molality. In a U-tube with a semipermeable membrane, measure osmosis (water crossing both ways, but more toward the stronger side) and osmotic pressure, watch red blood cells burst and plant cells plasmolyze, and explain salted cabbage, calcium chloride on winter roads and the concentration of IV fluid.
